George Stathakis, co-owner of Stax’s Restaurants, entered the restaurant business in 1975 when he purchased a luncheonette on Poinsett Highway featuring Southern-Style, down home meals. That restaurant - Stax's Original was just the beginning in a fine tradition of dining in Greenville. Today six restaurant/food service carry the Stax's name. "Future expansion isn't out of the question at this point, but growth will only come with a owner/manager at each location or there will not be a restaurant."
George Stathakis Co-owner Stanley Koumoustiotis Co-owner In 1986 George Stathakis sold Stax's Original to his brother Frank Stathakis and decided to open a fine dining restaurant hiring Stanley Koumoustiotis as the Executive Chef. In 1987, Stanley Koumoustiotis, a talented chef from Chicago, became a business partner and remains an owner and close friend of Stathakis today. Stax's Peppermill was an immediate success. It has been voted "Best Restaurant in Greenville for the past several years" more than once and has won countless local and several national awards. After experiencing such success with the Peppermill, Stathakis and Koumoustiotis began looking for additional opportunities for growth and expansion. In 1988, the partners opened Stax's Omega, a family-style diner known for its all day breakfast and extensive menu. A year later, they acquired 5,000-square-feet of property next door, and opened Stax's International Bakery. As a complement to that growth, in 1990, Stax's Grill was opened followed by Stax's Piano Bar in 1992 and Stax's Catering in 1997. To operate the Grill, Stathakis and Koumoustiotis brought in Charlie Cavalaris who has played a major role in the success of Stax's Grill. Frank Stathakis Co-owner Charlie Cavalaris Co-owner Stax’s diversity has been the reason for its success and you can see it with its newest ventures; Stax's Cooking Show and Stax's Seasonings sold at Bi-Lo grocery stores. Stax's has always made a point to hire professionals who are serious about the restaurant business. "You've got to hire good people, the right people" Stathakis says. Stax's growth can be credited to these skilled and loyal employees. "Without our employees, Stax's wouldn't be Stax's!"
